“The food was sublime: a perfect duck terrine, studded with apricots, a little tangle of cabello d’angel (spagetthi squash) on the side, then a meaty chunk of grouper with some delicate chard-like greens and a buttery white bean sauce.
The pudding was a chocolate ganache with a mandarin sorbet (citrus fruits are the Winter crop on the island), a lacy, nutty tuile, and salted caramel.

„Das Essen war grandios:Eine perfekte Ententerrine mit Aprikose,ein wenig cabello d`angel (Kürbis Spaghetti) dazu, dann Zackenbarsch mit zartem Mangoldgemüse an einer buttrigen Sauce von weissen Bohnen.
Zum Dessert wurde ein Schokoladen-Ganache an Mandarinensorbet (Zitrusfrüchte werden auf der Insel im Winter geerntet) mit Nuss Tuile und gesalzenem Karamel serviert.
