Prof. Minceva studierte Lebensmittelwissenschaften und Biotechnologie ( BSc ) sowie Verfahrens technik ( MSc ) an der Universität Ss. Ciryl and Methodius in Skopje, Mazedonien.
2004 promovierte sie an der Universität Porto, Portugal (Prof. Rodrigues).
Anschließend arbeitete sie in derselben Gruppe als Wissenschaftlerin und später als NATO Postdoktorand in Mazedonien.
