www.embryology.chSowohl bei der alkoholischen Gärung von Wein oder Bier als auch bei der Herstellung von Brot oder Milchprodukten finden fermentative Prozesse, d.h. Umwandlungsreaktionen organischer Stoffe durch Mikroorganismen bzw. Enzyme Anwendung.
Vor allem im Fall von Leguminosen und Ölsaaten ist eine Veredelung durch die Fermentation wünschenswert, da deren nutritive Eigenschaften deutlich verbessert werden können.
So können die Verdaubarkeit wesentlich gesteigert und antinutritive Inhaltsstoffe wie Enzyminhibitoren oder Glucosinolate gezielt abgebaut werden.
